Iced Dandelion Latte with Maca Condensed Milk (paleo & Vegan)

A refreshing morning elixir with a maca infused sweetened condensed coconut milk!

Ingredients

1 can full fat coconut milk

1/4 cup maple syrup

1/2 tsp lucuma (optional)

1/2 ts maca (optional)

1 1/4 cup water

1 tbsp dandy blend

1 tbsp raw cacao powder

Instructions

To make the maca condensed milk empty the can of full fat coconut milk into a small pot.  Heat over medium heat whisking often until it starts to boil.  Add the maple syrup and reduce to a simmer.  Allow it to simmer for 35-40 minutes or until it is reduced by about half.  Whisk in the lucuma and maca.  Allow to cool and pour it into a jar.

In a blender combine the water, dandy blend and cacao powder. Blend and pour over ice.  Add the sweetened condensed maca milk as desired! Enjoy!

Notes

*this recipe will make more sweetened condensed maca milk that needed for one serving.  Store it in a jar in the fridge for up to a week.

*the maca and lucuma are optional but add a nice caramel-y flavour
