Paleo and Whole30 Thanksgiving Stuffing

The perfect Whole30 and Paleo Thanksgiving stuffing!  Filled with sweet potato, sausage, dates, apples and walnuts!

Ingredients

1 tbsp plus 2 tsp ghee or avocado oil

1 sweet potato, medium dice

1 onion, small dice

1 garlic clove, minced

3 stalks of celery, chopped

1/2 lb sausage, casing removed**

1 apple, small dice

5 dates, de-pitted and chopped

1 1/2 cups walnuts, chopped

1 stalk fresh rosemary, removed from tough stalk and minced (about 1 tbsp)

1 tsp dried thyme

1/2 tsp salt*

ground pepper

1/4 cup fresh parsley, lightly chopped

1 egg

1/3 cup broth of choice

Instructions

Preheat the oven to 400 F.

Toss the diced sweet potato with 2 tsp of ghee, a pinch of salt and a couple of turns of pepper.  Spread on a parchment lined baking sheet and bake for 20 minutes.

Meanwhile, heat an oven safe skillet*** over medium heat.  Melt 1 tbsp ghee and add the onions, garlic and celery. Saute until the onions start to turn translucent.  Add the sausage and cook, breaking the sausage apart with a spatula as it cooks. Once the sausage has cooked add the apples, chopped dates, chopped walnuts, rosemary, thyme and salt. Cook for five minutes, until the apples start to get a little soft.  Add the baked sweet potato and fresh parsley and mix to combine.

Turn the oven down to 350F.

In a small bowl whisk the egg and broth together. Add it into the pan and mix to combine.  Move the pan into the oven and bake for 20 minutes.

Serve warm and enjoy!

Notes

* If you are using a salty broth you might need to decrease the amount of salt

**Make sure your sausage is free from sugars and wheat to keep it Whole30 and paleo

***I recommend a Lodge Cast Iron or a Le Creuset pan
