Pumpkin Cashew Cheese Sauce

This ooey gooey vegan cheese sauce is simple and easy to make.  Pour it over nachos or use it as a mac and cheese sauce.



1/2 cup pumpkin puree

1/2 cup cashew, soaked for 2 hours minimum

1/2 cup water

1/2 tsp salt

1 tbsp balsamic vinegar

1/4 cup nutritional yeast

1/4 tsp mustard

1 tsp lemon juice

pepper to taste


  1. Add all ingredients to a high speed blender and blend on high for a minute (until cashews are creamy).
  2. Pour over warm pasta and enjoy!
