It’s always nice to have some grab and go snacks throughout the day. Things like granola bars, fruit, nut mixes, veggies and dip. However, when it comes to bars there aren’t any that I love enough to keep in my cupboard. So instead, I make them. This version is boosted with collagen, maca and roasted dandelion root and is just sweet enough. Are you ready for it?
Simple to make, all of the ingredients go into the food processor to form a dough and are then shaped into a long rectangle, cut into bars and stored in the fridge. It really couldn’t be easier. I could see these also rolled into balls for easy access. Let’s take a closer look at some of the ingredients I included.
Maca: Maca powder is a powerful superfood that helps the body adapt to stress as well as regulate hormones. In studies it has shown to have anti-fatigue effects as well.
Collagen: Hydrolized collagen powder is my favourite type of protein to use. It has been shown to help with joint health as well as skin, hair and nails. I wrote an article on collagen over at Impact Kitchen with some cookies to make as well!
Dandy Blend: Dandy Blend is a brand of roasted dandelion root that I really enjoy. It has a bitter almost coffee like flavour and is incredibly good for you. Dandelion root is known to help support the liver in detoxification and also promote bile production!

PrintCollagen Protein Bars (No Bake)

These sweet and dense bars are the perfect post workout fuel. With dandy blend to help detoxify your liver, collagen to help support your muscles and cacao for anti-oxidants these area must to have on hand.

Ingredients
1/2 cup runny almond butter (I used Costco Brand)
1/3 cup collagen peptides (I used Great Lakes Brand)
3/4 cup soft, pitted medjool dates (about 8 large dates)
1/4 cup raw cacao powder
1 tbsp dandy blend
2 tsp maca
1 tsp cinnamon
pinch of sea salt
Instructions
Add all ingredients to a food processor and blend until a dough if formed. On a piece of parchment paper form the dough into a long rectangle. Cut into desired size and store in the fridge.
