Pumpkin Ginger Smoothie

pumpkin ginger smoothie

A zingy, pumpkin smoothie with green apple, ginger and lemon! Refreshing and tasty!

Ingredients

1/4 cup pumpkin puree

1 green apple, cored and chopped

1 tbsp lemon juice

3 tbsp coconut milk

1 inch piece of ginger, peeled

1 cup coconut water

2 tsp maple syrup, or to taste

Optional: ice cubes or frozen banana to make it thicker

Instructions

Add all of the ingredients to the blender and blend on high until smooth. Taste and add more sweetener if desired. Enjoy!

Notes

*This smoothie is a more liquid smoothie (think in between a juice and a smoothie). Ice or a frozen banana are optional here to increase thickness.  You could also freeze cubes of coconut milk and coconut water,  however, I enjoy it as is.
