This is not your typical pumpkin recipe. Nope. No PSL flavour here. There is no cinnamon in this recipe either. No nutmeg, no cloves, and no allspice. (I know! How can this be any good? But it is, trust me!)
There is however, fresh ginger, green apple and lemon making the most delicious, zingy smoothie. YAAAUM!

This smoothie is on the thinner side of smoothies. I would say it is in between a smoothie and a juice. I really like my smoothies this way as it’s thirst quenching and refreshing. However, if you like your smoothies really thick, you can add ice, a frozen banana or freeze the coconut milk and coconut water into ice cubes.
Ginger gives this smoothie a lot of kick and the green apple and lemon lend themselves to the zing as well. I used full fat coconut milk to help round out the flavour along with maple syrup for a little sweetness. You could sub a frozen banana for sweetness or even a date if desired.
And because this smoothie is filled with so much goodness (liver loving lemon, gut loving ginger and anti-oxidant rich pumpkin) you can definitely make yourself a double batch 😉.

Ingredients
1/4 cup pumpkin puree
1 green apple, cored and chopped
1 tbsp lemon juice
3 tbsp coconut milk
1 inch piece of ginger, peeled
1 cup coconut water
2 tsp maple syrup, or to taste
Optional: ice cubes or frozen banana to make it thicker
Instructions
Add all of the ingredients to the blender and blend on high until smooth. Taste and add more sweetener if desired. Enjoy!
Notes
*This smoothie is a more liquid smoothie (think in between a juice and a smoothie). Ice or a frozen banana are optional here to increase thickness. You could also freeze cubes of coconut milk and coconut water, however, I enjoy it as is.
