Slice and Bake Chocolate Chip Cookies (paleo & vegan)

Paleo and vegan slice and bake chocolate chip cookies. When baked they are soft on the inside and with the perfect crisp on the outside! Make a roll and keep it in the fridge for when the craving calls!

Ingredients

1 cup almond flour

1 cup tapioca flour

1 tsp baking soda

1/2 tbsp cinnamon

1/4 tsp salt

2 tbsp coconut sugar

1/4 cup coconut oil

1/4 cup maple syrup

1 tsp vanilla

1 tsp almond extract

1/4 cup chocolate chips

Instructions

  1. In a large bowl mix the almond flour, tapioca flour, baking soda, salt, cinnamon and coconut sugar.
  2. In a small pot melt together the coconut oil and maple syrup. Take off the heat and mix in the vanilla extract and almond extract.
  3. Add the wet ingredients to the dry ingredients and mix well.
  4. Mix in the chocolate chips.
  5. Place the dough on a piece of parchment paper and form into a log about 2 inches diameter. make sure it is squeezed together well.
  6. Wrap in the parchment paper and place in the fridge for a minimum of 10 minutes for up to three days.
  7. When you are ready to bake the cookies preheat the oven to 350 F and slice the cookies about 1 cm thick.
  8. Bake for 10-12 minutes.
  9. Allow cookies to cool on the baking tray as they will firm up as they cool.
