Well it has been a minute since I have been on here to share a recipe. Last week we were in Hawaii and the internet was just not co-operating so I apologize if you were over here looking for a new post! I have a few Hawaiian inspired recipes coming as well as my guide to MAUI so be sure to stay on the lookout for those!
And now, as the Ontario strawberries are coming out I have this wonderful salad for you. Fresh local strawberries with perfectly ripe avocados and freshly picked mint. The FRESHEST combo out there. Are you ready to give it a go?

When strawberry season rolls around there is no better feeling. Can you beat summers on the deck with the grill going, lots of fresh salads and sipping honey sweetened lemonade? NOPE. Those long, hazy, summer days are made for salads like this.
We enjoyed this salad for lunch on its own but it also makes a great plate to bring to a party. Simple, a crowd pleaser, and can easily be doubled or tripled for larger crowds. I would chop the strawberries and make the dressing ahead of time and just assemble once you are ready to eat.
Now, because this is a food blog, I had to share this cookbook some preschoolers made. It’s pretty cute and hilarious at the same time. Only kids can come up with this stuff!

This fresh summer salad tastes just like summer! With perfectly ripe avocado, fresh, local strawberries and freshly picked mint and a honey lime dressing.

Ingredients
For the Dressing:
2 tbsp lime juice
1 tbsp olive oil
1/2 tsp micoplaned fresh ginger
1/2 tsp light raw honey
zest of one lime
salt and pepper to taste
For the Salad:
3 cups chopped strawberries
2 large, ripe avocados, depitted, peeled and cut into chunks
1/3 cup chopped fresh mint
Instructions
For the dressing:
in a small mason jar combine all of the ingredients. Add the lid and shake.
For the salad:
lightly mix together all of the salad ingredients. Pour the dressing over and lightly mix again.
Simple is always best! This flavour combo is classic and it never disappoints! Love the addition of mint. Thanks for sharing.
