Tomato & Peach Salad with Green Dressing

The perfect late summer salad with fresh tomatoes, juicy peaches and a green honey dressing.

Scale

1 lb tomatoes of choice (I like a mixture of different small cherry tomatoes as well as larger heirloom)

1 lb peaches

1/4 cup soft cheese of choice (I recommend a cashew based vegan brie or a soft goat’s cheese)

1/4 cup chopped fresh cilantro

1/4 cup chopped fresh basil

Salt and Pepper to taste

Slice the tomatoes thinly and in quarters. I use a mixture of different cuts to make it visually more appealing.
Slice the peaches.
Arrange the peaches and Tomatoes on a plate and lightly sprinkle with salt and pepper
Spread the cheese out in clumps over the peaches and tomatoes.
Drizzle on the salad dressing and sprinkle with the fresh herbs.
