So this is September.
I’m not really sure where the summer went but I am mentally preparing myself for all things apple, pumpkin and cozy.
BUT FIRST- Let’s have one last hurrah with late summer produce by making this light and flavourful tomato and peach salad with green dressing while we still can. It is loaded with juicy peaches, harvest tomatoes and topped with fresh herbs, a soft cheese of your choice(vegan or otherwise) and drizzled with the most amazing green honey dressing. If only I could eat this ALL YEAR LONG.
Is there anything better than tomatoes and peaches when they are in their prime? The farmer’s market stalls are overflowing with every type of tomato possible and perfectly ripe peaches just at the very end of their season. Soon we will be back to winter tomatoes that really, just aren’t the same (at least here in Canada where our season is pretty darn short!).

You can make this salad as big or as small as you like depending on how many people you are feeding. I like to choose my tomatoes from the market and use a mixture of whatever looks good in a varying sizes. I also use peaches most of the time but like to throw in some white nectarines to mix it up a bit. The cheese is a nice addition and I have made this with both vegan cashew cheese as well as a soft goat cheese, so whatever your dietary preference, the salad will not disappoint.
The best part of this is my favourite salad dressing- Green Honey Salad Dressing. It is tart, slightly sweet, and packed with flavour. It also gives you a use for all of those herbs growing on your balcony! You are going to want to make extra dressing to use for every other salad you eat as well ;).

PrintTomato & Peach Salad with Green Dressing
The perfect late summer salad with fresh tomatoes, juicy peaches and a green honey dressing.
Ingredients
1 lb tomatoes of choice (I like a mixture of different small cherry tomatoes as well as larger heirloom)
1 lb peaches
1/4 cup soft cheese of choice (I recommend a cashew based vegan brie or a soft goat’s cheese)
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh basil
Salt and Pepper to taste
Instructions
- Slice the tomatoes thinly and in quarters. I use a mixture of different cuts to make it visually more appealing.
- Slice the peaches.
- Arrange the peaches and Tomatoes on a plate and lightly sprinkle with salt and pepper
- Spread the cheese out in clumps over the peaches and tomatoes.
- Drizzle on the salad dressing and sprinkle with the fresh herbs.
- Serve and Enjoy!
