Easy dinners are the best dinner. Minimal chopping, minimal waiting and lotsa flavour is my favourite kind of meal! And right now I am totally loving this one pan orange glazed chicken. EASY and QUICK. It also happens to be whole30 and paleo compliant which makes it a total winner in my book.

I like to make dinner in one pan because I have a tiny kitchen and tiny kitchen problems arise when I use more than one dish. It usually results in me rearranging all of my dishes while I try to get out one pan and then rearranging everything again while I try and get out another pan. SO! instead of actually going through the hassle of getting out more than one dish, sometimes I just cook with one. Logical right?
You could easily double this recipe or if you just want more veggies you could double the sweet potatoes. I only used one sweet potato as I found it was enough for myself and my partner Algis. Also, when cooking meat I always use a meat thermometer! It is the easiest and best way to tell if you meat is cooked (nobody wants to slice into some undercooked chicken).

A quick and easy weeknight dinner that is full of flavour! Paleo and whole30 compliant!

Ingredients
For the marinade:
1/3 cup orange juice
zest of one orange
1/4 cup balsamic vinegar
1/4 cup avocado oil
1/2 tbsp minced fresh rosemary
1 tsp tamari (or coconut aminos for whole30)
1/2 tsp salt
1/2 tsp garlic powder
1tbsp dijon mustard
1lb skinless, boneless chicken thighs
For the bake:
1 med sweet potato, small dice
3 shallots, peeled and quartered
1/2 an orange, sliced
2 rosemary stalks
Instructions
- In a flat glass dish mix the marinade ingredients together.
- Add the chicken thighs and flip them over to ensure everything gets covered in the marinade. Let it sit, covered, in the fridge for 30 minutes.
- Preheat the oven to 400 F
- Brush a tbsp of avocado oil over a 10 inch oven safe cast iron dish.
- Add your chopped sweet potato, shallots, orange slices and rosemary stalks.
- Place the marinated chicken in the pan as well and pour the marinade over everything.
- Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165 F.
