Craving all of the warm and yummy baked goods from the oven? Yes, me too! Luckily I have a few recipes up my sleeve that use only natural sugars and whole ingredients. Like these Paleo Banana Date Muffins! They are sweetened only with bananas and dates and are warm, soft and perfect for those sweet treat cravings. These are a new favourite around here and I plan on baking them again soon (as soon as I’m done eating my last batch;)!

What else is so great about these Paleo Banana Date muffins? They require zero bowls and just a food processor (OR, if you don’t have a food processor you could just mix it all by hand). Throwing everything into the food processor is SO easy and fast.
They are also completely gluten free, grain free, dairy free and are still soft, moist and banana-y. I have used both medjool and sayer dates to make these and both came out wonderfully. I would assume these freeze really well to save for later but we haven’t been able to keep them long enough to try. Next batch I’m hiding in the freezer!
I ended up basing these muffins off of my Paleo Orange Date Muffins which are one of our reader’s favourites. So if you have oranges instead of bananas give them a go!

Ingredients
3 ripe bananas
1/2 cup packed dates, pits removed
1/2 cup unsweetened almond milk
1 egg
1 tsp vanilla
1/2 cup coconut oil
1 1/2 cup almond flour
1/2 cup coconut flour
1/2 cup tapioca flour
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp salt
1/4 cup chopped walnuts
Instructions
- Preheat oven to 350 F and line a 12 muffin tray.
- In a food processor add the peeled, ripe bananas and dates. Blend together.
- Add the almond milk, egg, vanilla and coconut oil and blend again.
- Add the almond flour, coconut flour, tapioca flour, baking powder, baking soda, cinnamon and salt and blend until well combined.
- Scoop evenly into the 12 muffin cups and top with the chopped walnuts.
- Bake for 20-22 minutes. Let cool before eating!
