Lemonade anyone? What if I told you there was a lemonade out there that will basically change the way you make lemonade forever?! It’s called Tahitian lemonade and you add full fat coconut milk. Yup, life changing.
I first had Tahitian lemonade in this cute little cafe on the island of Kauai. My first response-

I love sour things. Anything extra zingy and a little sweet is right up my alley. Which is why I love lemonades and limeades so much. Usually I have to dial back the tartness ten notches or so just to make it bearable for everyone else but in this recipe I go full tart. FULL TART PEOPLE. The coconut milk really helps to balance it out but, if you still find it too tart for your taste buds just add a lil extra water and honey until you find the perfect, personalized ratio for you. You do you.
In all honesty, the best and easiest way to make this is to throw all of the ingredients in the blender. It turns this lovely light blue colour (thanks to the super antioxidant Blue Majik). If however, like me, you want to photograph the pouring of every ingredient and that beautiful ombre effect then by all means, do what I did. Just know it will take you longer (but it will be totally insta worthy)
In other completely non food related news I have finished a few books from my 2018 book list and thought I would share.
I read The Hate U Give. I loved this book and it definetely deserves all of the hype it’s getting. It is very timely, thought provoking, and even though it is a young adult book I highly recommend it for everyone!
I also read the Seven Husbands of Evelyn Hugo (even though it wasn’t on my list). I had ordered this one from the library as a bonus and decided to take it with me when I was away. It is a quick and easy read with a little twist at the end that I didn’t see coming.
Lastly, I read Lilac Girls while I was away which is historical fiction following three women during and after the holocaust. A riveting read about the women prisoners who were operated on called “the rabbits” during the war.

Easy, colourful and full of magic! Tahitian lemonade uses coconut milk to help balance the tartness and the optional addition of Blue Majik gives it a wonderful blue hue.

Ingredients
1/4 cup lemon juice
3/4 cup water
1–2 tbsp raw honey
200 mg blue majik (optional)
1/4 cup full fat coconut milk
Instructions
The easiest way to make this is to throw it all in the blender and blend! It turns this beautiful blue colour.
If you want to create the ombre look then mix the lemon juice, water, honey and blue magic together and pour the coconut milk over top (very insta worthy). Just remember to mix before drinking or it will be too sour without the coconut milk!
