I am a firm believer that the dressing makes the salad. You can have great ingredients but if the dressing is only meh… then the salad is only meh. This doesn’t mean the dressing has to be fancy, au contraire, my friend. I’m not into fancy at all and in fact, the less time it takes to make a dressing, the better. TBH, my usual go-to is olive oil, balsamic, salt and pepper because I’m lazy like that. But really, a dressing like this is totally worth those extra five minutes. Yup, five minutes and you will have a creamy, dreamy sauce to pour on everything.
I do have a slight obsession with this dressing right now. I am busy putting it on all the things. Snacky? Dressing and veggies. Dinner? Dressing and tacos. Lunch? Dressing and salad. You get the idea.
With so many of my favourite ingredients in it how can I not be obsessed. Things like creamy almond butter, light and flavourful miso paste, cilantro (team cilantro for always and ever here), lime juice and a few others to bring it all together. I was originally going to post this with a bowl recipe coming up but thought it needed a post all it’s own. Are you ready for it?

I really love using miso in my recipes. I don’t have soy too often and when I do I stick to organic fermented products like tamari and miso. I usually use a light miso in most of my recipes as I find it the easiest to work with and when mixed with the other 7 ingredients in this recipe- pure magic I tell you!
This recipe comes together in no time and is so easy to make that there really isn’t an excuse to NOT make it. So go make it. RIGHT. NOW. YOU’RE WELCOME.
In other slightly off topic news, I recently finished TWO books from my 2018 Booklist. YES! I read The Hate U Give (highly recommended) and Lilac Girls. I order a lot of my books from the library and these ones came right at the same time and I had to bust through them. I am thinking of reading Braiding Sweetgrass next. Have you read it?

Creamy, flavourful and a great topping for your salad!

Ingredients
1/4 cup almond butter
1/4 cup packed cilantro
1 tbsp light miso
1 tbsp lime juice
1 tbsp rice wine vinegar (if you are paleo you could try subbing more lime juice for this)
2 tbsp olive oil
1 tsp maple syrup
pinch red chili flakes
2–3 tbsp water to thin
Instructions
Add all of the ingredients with the exception of the water to a mini food processor or small blender. Blend until incorporated. Add the water 1 tbsp at a time until desired consistency is reached.
