Cardamom Meyer Lemon Curd (with honey and ghee)

LEMONS.

My favourite fruit ever (with avocados coming a close second).

Let me count the ways in which I use lemons:

  1. Everyday in the morning with warm water and a little pink Himalayan salt.
  2. As salad dressing with a little EVOO and salt (it’s really all you need!)
  3. Over freshly roasted cauliflower and broccoli.
  4. In a tangy lemonade. 
  5. In THIS Cardamom Lemon Curd.

Hands up if you love sour over sweet like me? Now if only I could grow my own lemon tree here in Toronto…

This Meyer Lemon Curd will have to do. And because I love the combination of citrus and cardamom I added it in (totally optional but if you love cardamom do give it a try).  This recipe uses honey as a sweetener and ghee instead of butter so it is not as sweet as the typical curd and definitely has more zing.

Mine would definitely be avocados. Guacamole for every meal. YES.

Me and guacamole are true love.

And sometimes, it’s nice to dress my true love up. Like with green apples and jalapeños. Still simple, and yet a little bit extra. This Green Apple Guacamole Guacamole is refreshing, tart and the perfect game time snack!

Basically what dreams are made of.  With only five ingredients and 20 minutes you can have yourself the tastiest spread for your toast, fruit, oatmeal, pancakes or waffles.

Tomato Jam is a thing.  And currently, it is MY thing because I can’t stop making it.

It’s a sweet and tangy jam with some warming spices like ginger and cinnamon as well as cumin to keep it balanced.  Usually, sweetened with tons of sugar, I used dates instead.

You can put this stuff on basically everything.  Egg? Jam. Salad? Jam. Vegetables? Jam. Meat? Jam. You get the idea.  It goes really well with your favourite cheese as well as avocado toast.  Huzzah!

If you are missing all of the treats and desserts during your whole30 stint like I am (I am missing this and this and this and this and this) then maybe creamy sauces and dips are your answer.  So stop scrolling through Instagram and Pinterest looking at all the desserts you could be eating and make this Thai Almond Butter Sauce.  It’s good.  And I mean REALLY good. Creamy, tangy, a little spicy and takes 10 minutes to make.
