Happy Monday Friends!  And what better way to celebrate a Monday than with ICE CREAM!

I Scream, You Scream, we all….. you get the picture. Ice cream is awesome. nuff’ said. Especially if it’s vegan and refined sugar free AND you don’t need an ice cream maker. I wanted to create a vegan/dairy free ice cream that was no churn and I also wanted to add that miso flavour (it pairs so well with nut butters-cashew, peanut, almond). Almond, Miso, Cilantro Dressing

I am a firm believer that the dressing makes the salad.  You can have great ingredients but if the dressing is only meh… then the salad is only meh. This doesn’t mean the dressing has to be fancy, au contraire, my friend. I’m not into fancy at all and in fact, the less time it takes to make a dressing, the better.  TBH, my usual go-to is olive oil, balsamic, salt and pepper because I’m lazy like that.  But really, a dressing like this is totally worth those extra five minutes.  Yup, five minutes and you will have a creamy, dreamy sauce to pour on everything.

I do have a slight obsession with this dressing right now. I am busy putting it on all the things.  Snacky? Dressing and veggies. Dinner? Dressing and tacos. Lunch? Dressing and salad. You get the idea.

With so many of my favourite ingredients in it how can I not be obsessed. Things like creamy almond butter, light and flavourful miso paste, cilantro (team cilantro for always and ever here), lime juice and a few others to bring it all together.  I was originally going to post this with a bowl recipe coming up but thought it needed a post all it’s own.  Are you ready for it?

Miso you say? In dessert form? YES!  Miso is fermented soy that contains beneficial bacteria for your gut.  It is a paste that provides a certain umami flavour.  Umami in desserts works well in the right amount.  You have to be careful not to add too much though or not to use a miso paste that is too dark. It can get ugly quickly! Use a light, organic miso paste and start with a small amount, adding more as you need it.
