Nevertheless, I refuse to let snow stand in the way of me and spring. SPRING VIBES all around with this Lemon and Herb Soup. Made with sweet potato, sausage, rice and loads of fresh herbs you can’t help but feel spring in the air. This soup also makes the perfect transition from those snowy cold, by the fireplace days to the warmer, sunshiny, want to spend all of my time outdoors in my garden days. It’s warming and grounding and yet still light and somehow refreshing.

SOUP you say! Didn’t I just post a soup recipe? Well, it was a stew actually but yes.  I hadn’t planned on making this recipe until I signed up for The Little Plantation‘s Food Photography Contest.  The first task was to take photos of onions and leeks (or something made from onions and leeks) and of course, being up for the challenge I made this recipe.  It was so easy and I loved it so much I decided to share it here!

I don’t dislike winter, I swear, but right about now I could use a good dose of vitamin D and some sunshine. Soup season is in full force over here. I can’t help it. It heals the soul. A big ol’ bowl of warming soup for all your worries.

So if you don’t mind I’ll be eating my feelings with this Chipotle Vegetable Soup filled with cauliflower, sweet potato, a warming chipotle broth and topped with avocado. Avocado is the ultimate soup topping. I don’t know who first decided to put avocado on soup but I. AM. A. FAN.

Tomato Coconut Soup with Sweet Potato Noodles. Holy YUM.

So, I couldn’t really decide what to call this soup. It kind of has that tom yum or hot and sour soup vibe but without the spice.  It is also kind of like a ramen wannabe because there are lots of fresh veg and egg packed on top. However, the broth is a tomato and coconut base with lime juice and coconut aminos giving it a unique, zingy flavour.  And despite all of the things you can compare it to, the one thing I know is that it is delicious my friends. So yes, call it what you want, I will just stick to delicious.

Chilled Green Blender Soup (Paleo & Vegan)

slowly melting into a giant puddle…. 

Which is why blender soups may just be the best invention ever.  When you can just throw a whole bunch of green, savoury things and herbs into a blender and it comes out delicious- what kind of magic is this?

So when it is 35 degrees Celsius outside and you are too hot to move this is what you make.  A cold blender soup that is jammed with greens and herbs.
