Can we talk about breakfast for a moment? I love breakfast (even when I have it for dinner) but I must admit that what my breakfast looks like has changed dramatically over the last few years.
When I was in university the vast majority of my diet was sugar (ummm Lucky Charms for breakfast and Sour Patch Kids for lunch). Obviously not the optimal diet! Moving on after university in my attempt to eat healthier I consumed a lot of toast, fruit, and skim milk- which also ended up not being optimal for me. As I got older and more intentional about what I was putting in my body I started experimenting with loaded bowls of oatmeal- I would cram these bowls full of ground flax/chia, hemp seeds, nut butters, goji berries, fresh fruit, berries and superfoods. These bowls were filled with awesome but honestly never left me feeling great. So, I decided I had to move away from sweet and onto savoury.
Five years later, with my body is ever changing, I have found that high fat and low sugar breakfasts are working for me. I obviously still enjoy my fair share of smoothies and paleo waffles but the majority of my breakfasts involve eggs or leftovers from the night before. I have found that these types of breakfasts keep me full longer, give me more energy and I don’t feel crappy after having them! Knowing what works for me didn’t come easily and it took a lot of experimentation along with many ups and downs but I encourage you to experiment and find out what works best for your body!
Here are some savoury things that I like to include in my breakfasts:
- ghee
- nut/seed butters
- eggs(soft boiled, fried, scrambled… the options are endless!)
- bone broth
- elixir with collagen and ghee
- leftover dinner
- sweet potato toast
- soup
With that being said, this Savoury Breakfast Stack of Pancakes is basically my ideal breakfast- so satisfying and leaves me feeling great! I would consider this more of a weekend breakfast as it’s not something you want to be making when you are rushing out the door with your matcha latte in hand. This breakfast also includes my Avocado, Green Apple, and Jalapeño Sauce which you definitely don’t want to skip out on. Make the sauce first so you have it ready and then continue on with the pancakes, eggs and bacon. Are you ready to give it a go?

Who needs sweet when you can have savoury?! With just a few ingredients you could be on your way to making this your favourite breakfast ever! Dairy free, gluten free and paleo, the stacks are sure to impress.

Ingredients
For the Pancakes
4 eggs
1 cup almond flour
1/2 cup arrowroot flour
1/2 cup almond milk
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp sea salt
For the Stacks
Avocado, Green Apple & Jalapeño Sauce
Your favourite salsa
Fried or scrambled eggs
Bacon
Cilantro for garnish
Instructions
For the Pancakes
In a medium size bowl whisk together all of the ingredients. Heat your pan over medium heat with a little oil or ghee. Pour 1/4 cup of the batter onto the pan. When the bubbles start to come through, flip the pancake.
To assemble the stacks:
Prep the Avocado, Green Apple, Jalapeño Sauce ahead of time. While the pancakes are cooking, cook the bacon and eggs. To assemble the stacked layer the Green Sauce, salsa and bacon on top of each pancake and top with an egg. Enjoy!
Notes
These pancakes are in between pancakes and crepes. You could use 1/2 cup batter and try making a larger crepe instead. I also love these smothered with almond butter and chia jam.
