Smoothie season is upon us (it never really left did it?!) and I am starting things off with this refreshing strawberry beet smoothie. I know what you are thinking-ewwww… beets?!. YES, beets! They add a little sweetness without being too earthy and when combined with strawberries they make the most glorious colour (hello antioxidants and all things healthy).
I use a high speed blender to make this. A regular blender should have no problem as long as you chop the beet before throwing it in there. Alternatively you could also grate the beet so it blends easier. I also just threw the whole orange in the blender after I peeled it. With a high speed blender there were no rogue seeds but be careful if you don’t think your blender can handle the seeds!
As a side note, I also think this smoothie would make really great popsicles and then you are actually eating your vegetables in popsicle form. THE BEST WAY TO EAT THEM.

A tasty combination of strawberries, fresh beets, orange, banana and lemon! So light and refreshing!
Ingredients
1 cup frozen strawberries
1/3 cup peeled and cubed raw beet
1 whole orange, peeled
1/2 frozen banana
1 tbsp lemon juice
1 cup cold water
Instructions
- Place all of the ingredients in a high speed blender and blend until smooth.
- Enjoy!
