Have you eaten your fair share of delicata squash this season yet?  If not, you are missing out.  Easily one of my favourite squash out there (pssshh… who needs butternut?!) because it’s quick and easy to prepare, really sweet and flavourful, uses minimal seasoning (just thrown some salt and pepper on there) and you can even eat the skin! Obviously, I needed to make a recipe using delicata squash for my favourite meal of the day.

My favourite meal of the day in order:

  1. breakfast
  2. breakfast
  3. breakfast
  4. breakfast for dinner.

Breakfast food, meet interweb friends. Interweb friends, meet breakfast food.

The reason breakfast food is so good is because you can have it for breakfast(duh), for lunch (three cheers for brunch!) or for dinner(who doesn’t love pancakes for dinner?!).

My favourite breakfast foods involve eggs. I like to dream up different ways to eat eggs and recently, I have been eating this Thai inspired sweet potato breakfast bake that is of course, Whole30 complaint.  Sound delicious? Because it is!

There is something about baking that helps ease the chill on those cold winter days.  It was an almost a subconscious response to the  crazy snow/ice/wind storm we had this past weekend in Southern Ontario (yes, it’s mid April- so technically it’s SPRING). The sounds of the heavy winds, tree branches crashing on the roof and tiny ice pellets as they rained down over the city drove me to the oven in hopes of creating something comforting and warming to ease the idea of having snow when it’s almost May. And wouldn’t you know it, it involved chocolate. So at least we have this muffin recipe to thank the weather for if nothing else.

Can we talk about breakfast for a moment?  I love breakfast (even when I have it for dinner) but I must admit that what my breakfast looks like has changed dramatically over the last few years.

When I was in university the vast majority of my diet was sugar (ummm Lucky Charms for breakfast and Sour Patch Kids for lunch). Obviously not the optimal diet! Moving on after university in my attempt to eat healthier I consumed a lot of toast, fruit, and skim milk- which also ended up not being optimal for me.  As I got older and more intentional about what I was putting in my body I started experimenting with loaded bowls of oatmeal- I would cram these bowls full of ground flax/chia, hemp seeds, nut butters, goji berries, fresh fruit, berries and superfoods. These bowls were filled with awesome but honestly never left me feeling great. So, I decided I had to move away from sweet and onto savoury.

Do you ever just throw things in the blender and hope it turns out?  Well guess what- you’re not alone! And sometimes it’s hard to choke down that brown sludge coloured smoothie you thought would turn a beautiful purple colour(but you do anyways because there are so many adaptogens and expensive ingredients in there).  But NOT this time! This time I have you covered. A peach basil and almond smoothie bowl that tastes and looks delicious (no brown sludge here thank you very much!). Side note- For more tasty smoothie recipes check out  Banana-less Green Smoothie and my Blood Orange Smoothie.

This smoothie bowl is sweet, healthy, creamy and simple to make. This recipe is so easy it takes just five minutes to prepare, plus/minus a few minutes depending on if you style your bowl with perfectly placed toppings and photograph it in just the right natural light (oh hiiii that’s meeeee).  Smoothies are also more fun when they are in bowl form. Fact. You can eat them with a spoon and and add endless amounts of toppings to take your smoothie from snack to full on meal.  Some of my favourite smoothie toppings are- frozen berries, hemp seeds, cacao nibs, toasted coconut, nuts and seeds, any kind of nut butter, coconut yogurt, coconut butter, rose petals, spices like cinnamon, ginger or cardamom.
